

Our Spinach is grown for two things: tenderness and density of nutrition. We direct-seed it into beds built with deep mulch and biologically active compost, then let it fill in as a thick carpet of dark green leaves.
The covered, undisturbed soil stays cool and evenly moist, which keeps the plants from bolting and allows them to develop thin stems and soft leaves. That means you can toss the whole leaf into salads without chewing through stringy veins, or wilt it quickly into soups, stews, and sautés without it turning to mush.
Raw, it brings a clean, slightly sweet flavor to salads and smoothies. Cooked, it folds easily into eggs, pasta, or beans. Because we harvest and chill it right away, the leaves hold their structure and color in your fridge far better than generic bunches.
